Healthy & delicious Rainbow Carrots!

We are all used to eating the orange carrot, but they also come in a variety of other colors like white, yellow, purple and red! The perfect snack or side dish – sweet, tender & delicious!


  • carrots
  • coconut oil
  • cinnamon
  • salt & pepper to taste


  1. Preheat oven to 200°C (400°F).
  2. Place carrots on a lined baking sheet.
  3. Drizzle coconut oil (melted) onto carrots until they are evenly coated.
  4. Add a dash of cinnamon and some salt & pepper to taste.
  5. Bake for approximately 40-45 mins or until tender.
  6. Enjoy!
